Ingredients

  • 4 cups fresh blueberries (2 pints)
  • 4 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons cornstarch
  • 1/3 cup water
  • 1/2 teaspoon fresh lemon juice

Instructions

  • Combine the blueberries, sugar, vanilla extract and cornstarch in a medium saucepan.
  • Add the water and the lemon juice and bring to a boil over high heat. Stir occasionally.
  • Reduce the heat and simmer for 15 minutes, or until the mixture begins to thicken.
  • Remove from the heat. You can serve it warm or let it cool to room temperature, then cover and refrigerate.
