Guacamole

My husband Ben and I love Guacamole. Whenever we go to a Mexican restaurant we order a bowl as soon as we are seated. Whenever we have guests we make a boat-load. It has now become Ben’s task to make this, though he has me chop up the onions and garlic. Most recipes I’ve looked at have tomatoes and cilantro in the mix, but we omit these and go for the pure avocado, onion, garlic sting your nose a bit style. We and guests tend to gulp up the whole bowl and scrape off every bit of it with blue corn tortilla chips. After all, we must eat it all before the avocado starts to turn brown, right?

 

Guacamole

Servings 3 people

Ingredients

  • 3 avocados peeled, pitted
  • 1 fresh lime juiced
  • 1 teaspoon salt
  • 1/2 cup diced onion
  • 1 teaspoon minced garlic
  • 1 pinch cayenne pepper optional
  • tortilla chips blue corn, for serving

Instructions

  • In a medium bowl, mash together the avocados, lime juice, and salt.
  • Mix in onion and garlic.
  • Stir in cayenne pepper. (optional)
  • Place the avocado seeds in the bowl to help prevent the avocado from discoloring.
  • Serve immediately, or cover with plastic wrap and refrigerate 1 hour for best flavor. Make sure that the plastic wrap is touching the avocado directly to avoid discoloration.
