This coffee cake has a special place in my heart because it’s based off of a Streusel Coffee Cake recipe from\u00a0my 84-year-old American Grand-Uncle Ted.\u00a0My father was a high school exchange student in Iowa in 1964, and stayed at Ted’s sister’s home. I’ve been visiting Iowa with my father fairly often\u00a0since I was young, and Uncle Ted would always bake this home-made coffee cake for breakfast. To me there’s nothing more American than waking up to a wonderful smell of fresh coffee and sweet cinnamon warming\u00a0in the oven. This cake is like a fluffy and light\u00a0pound cake\u00a0with cinnamon swirls. It’s called coffee cake because it goes so well with coffee (or tea!), but there’s no coffee in it. Ted puts chopped nuts in his. My husband Ben thinks we can try adding raisins. It’s a simple recipe with no need for special ingredients or gadgets, and it’ll be fun to try variations!<\/p>\n

Ingredients<\/h3>

For the batter<\/h4>
  • 1\/2<\/span> tablespoon<\/span> unstalted butter<\/span> for greasing pan<\/span><\/li>
  • 3\/4<\/span> cups<\/span> granulated sugar<\/span><\/li>
  • 1\/4<\/span> cup<\/span> canola oil<\/span><\/li>
  • 1\/2<\/span> teaspoon<\/span> vanilla extract<\/span><\/li>
  • 1<\/span> egg<\/span><\/li>
  • 1 1\/2<\/span> cups<\/span> all-purpose flour<\/span><\/li>
  • 2<\/span> teaspoons<\/span> baking powder<\/span><\/li>
  • 1\/2<\/span> teaspoon<\/span> salt<\/span><\/li>
  • 2\/3<\/span> cups<\/span> whole milk<\/span><\/li><\/ul><\/div>

    For the cinnamon swirl<\/h4>
    • 1\/4<\/span> cup<\/span> dark brown sugar<\/span><\/li>
    • 1\/8<\/span> cup<\/span> all-purpose flour<\/span><\/li>
    • 2<\/span> teaspoons<\/span> ground cinnamon<\/span><\/li>
    • 1\/8<\/span> cup<\/span> canola oil<\/span><\/li><\/ul><\/div><\/div>\n

      Instructions<\/h3>
      • Grease a 8 x 8 pan with the butter.<\/div><\/li>
      • Preheat the oven to 350 degrees F.<\/div><\/li>
      • In a large bowl, beat together the sugar, oil, vanilla and egg.<\/div>

      • In a medium bowl, sift together the flour, baking powder and salt. Add to the egg mixture.<\/div>

      • Add the milk and beat.<\/div>
        \"\"<\/div> <\/li>
      • Pour the batter into the greased pan.<\/div><\/li>
      • In a small bowl, mix together the ingredients for the cinnamon swirl.<\/div>

      • Spread the cinnamon mixture over the batter.<\/div>

      • Cut through the batter with a table knife and swirl.<\/div>

      • Bake in the oven for 30 minutes (convection oven) or until a toothpick comes out dry from the cake.<\/div>
