
Chili (Instant Pot)
Recipe for a 6 quart Instant Pot.
Ingredients
For the chili
- 2 tsp olive oil
 - 2 lbs ground turkey
 - 10 oz diced onion (1 large onion or 10oz diced onion)
 - 1 1/2 tsp minced garlic
 - 28 oz diced canned tomatoes do not drain
 - 15 oz tomato sauce
 - 1 cup chicken broth
 - 45 oz canned beans kidney, pinto, black
 - 11 oz canned corn
 
For the spice mix (see notes)
- 2 tbs chili powder
 - 2 tsp ground cumin
 - 2 tsp sweet paprika
 - 2 tsp cocoa powder
 - 1 1/2 tsp kosher salt
 - 1 tsp ground pepper
 
To serve
- basmati rice steamed
 - cheddar cheese shredded
 - avocados diced
 
Instructions
- Turn on the Sauté function on the Instant Pot and select More.
 - Add the olive oil to the pot.
 - Add the meat and cook until browned, breaking up the meat with a spatula as you stir.
 - Add the onions and cook for 3 minutes or until softened.
 - Add the garlic, tomatoes, tomato sauce, broth, beans, corn, spice mix to the pot. Stir well.
 - Turn the Instant Pot to the Chili/Beans setting and place the lid on the pot. Cook for 20 minutes.
 - Release the pressure manually or allow it to release naturally.
 - Serve with steamed rice and assorted toppings.
 
Notes
- Use 40g of spice mix if pre-mixed
